cookWhite Turkey Chili

Quick and easy (and yummy).....

1 tablespoon oil
1/2 large onion, finely chopped
1 jalapeno chile, finely sliced
2 garlic cloves, minced
1/2 green pepper, sliced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
Coarse salt and ground pepper
1/2 pound turkey mince
1 can cannellini beans (15.5 ounces), drained and rinsed, and some crushed
To serve
lime wedges, fresh coriander, sour cream, and grated cheese

Fry onion, jalapeno, green pepper, garlic, oregano, and cumin; season with salt and pepper. Cook, stirring occasionally, until vegetables begin to soften, 3 to 4 minutes.

Add turkey and cook, cook until no longer pink. 2 to 3 minutes. Add beans and 3/4 cup water. Bring to a boil, reduce heat to medium and simmer until thickened, 5 to 10 minutes.

Season with salt and pepper; garnish as desired.

Note: Mashing some of the beans releases their starch and thickens the chili.
