Boned Chicken with Roast Garlic & Apple Stuffing

Apple stuffing, for chicken, not just pork!

Wrap a garlic bulb in foil, add a little olive oil, and roast for 20 mins. Cut in half and squeeze the flesh into a bowl. Mix in roughly grated apple (2?), lemon zest, breadcrumbs (~2 cups), parsley, salt & pepper - add a little melted butter to bind.

Use to stuff a boned chicken (get your butcher to do this), and secure with string.

Bake for 40-50mins at 200C. Serve with couscous.

Couscous

Cook couscous as per instructions, fork to seperate grains & add a splash of olive oil. Add grated carrot, skinned deseeded tomatoes, lemon juice, chopped red onion, mint, parsley, coriander, a pinch of cinnamon and cumin. Season with salt and pepper.
