cook Egg Nog 

Serves 8-10

6 eggs separated
185g/6ozs caster sugar
1 tsp vanilla extract
250ml/8floz milk
500ml/16floz cream (or vanilla ice-cream)
100ml/3.5 flozs rum....or to taste
nutmeg
cinnamon stick (optional)

Beat the egg yolks with the sugar until all is well combined and the mixture thickened slightly.

Gradually beat in the vanilla, milk, cream/ice-cream and alcohol.

Beat the egg whites until they form soft peaks, then whisk these into the cream mix.

Pour into glasses and sprinkle with nutmeg and add in a cinnamon stick.
